Orzo Salad

I love making this salad when summer rolls around. It’s usually on repeat for the season and it’s one I like to have on hand for lunches for my husband & I. It’s super fresh & light tasting and it comes together with minimal ingredients (although I’m sure you could add more). It’s always a summertime fave here.

I found the original recipe here. Here’s how I throw it together:

Cook 1 1/2 cups of orzo pasta. Drain and let cool for a bit. Then stir in 2 tbsp of olive oil, the juice & zest of 1 lemon. Next add chunks of cucumber (I used 3/4 of a large english cucumber & didn't bother seeding it). Then add 1/2 cup of feta cheese (I definitely used more...I love feta). Mix in salt & pepper. If I have fresh herbs like parsley I’ll throw some in, if not I skip herbs all together. Lastly, set in fridge to cool. It's that easy.

Enjoy! It doesn’t usually last more than two days in our house :)
